“Flagstaff House has spent 47 years refining its formula: striking Boulder views; white-tablecloth elegance; a 15,000-plus-bottle wine list; and a traditional à la carte menu. But in January, the restaurant underwent an evolution when longtime chef de cuisine (and winner of Food Network’s Chopped) Chris Royster became executive chef and Adam Monette, grandson of founder Don Monette, stepped up as general manager. The two young guns—both are under 30—have maintained the fine-dining trappings, but they’ve added a sophisticated, seasonal five-course tasting menu. Now, you can order what you like or let Royster guide your meal (think: tuna tartare to start, followed by scallops, pork belly, foie gras, beef rib-eye, and, for dessert, berry strudel). The new approach, paired with the timeless vista, should preserve Flagstaff House’s relevance for at least another half-century.”
