A visit to iconic Flagstaff House Restaurant (1138 Flagstaff Rd., Boulder) is in order, where Chef/partner Chris Royster (past Chopped Champion) is offering new versions of both the Three Course Menu and his multi-coursed Chef’s Tasting Menu as a decadent way to celebrate welcoming guests back into the storied restaurant’s dining room, open and ready to go with best practices enabled. Brand-new dishes like Spanish Octopus “Puttanesca” with crisp potato, castelvetrano olives, white anchovies and sweet peppers; Country Style Venison Torchon with cornichons, house pickles, whole grain dijon and brioche toast; and the Maine Day Boat Lobster Tempura with sushi rice, quail egg, cilantro, pickled cordyceps and a lobster shoyu reduction. Don’t miss a cocktail from the all-new menu, like the volcanic Pelé’s Influence, named after the Hawaiian goddess who creates new land from lava and featuring two kinds of rum, blood orange liqueur, liquor 43, white creme de cacao, blood orange shrub and fresh pineapple; or the take on the classic Aviation in This is Your Captain Speaking with white vermouth, creme de violette, prosecco and soda.
