Four Decades of Award-Winning Wine

For over four decades, Flagstaff House has been recognized among the world’s finest wine destinations, earning the prestigious Wine Spectator Grand Award every year since 1983. Today, the cellar holds more than 14,500 bottles, from rare vintages and boutique selections to hard-to-acquire treasures, offering guests an unparalleled journey through the world of wine.

What began in 1971 with founder Don Monette’s personal passion for collecting has grown into an enduring legacy, with each generation expanding and refining the program. At Flagstaff House, every pour is an invitation to discover something extraordinary.

Housed across four curated cellars are some of the world’s most sought-after collections, including one of the largest holdings of Domaine Romanée-Conti Grand Cru Burgundies, more than 30 vintages of Dom Pérignon, one of the few complete Château Mouton Rothschild Artist Collections, over 20 vintages of Australia’s Penfolds Bin 95 Hermitage, and deep verticals from producers across the globe.

As Wine & Beverage Director Connor Sullivan explained, “if you’re looking for any wine, from any producer throughout the world, you’re probably going to find it here in our cellars.”

Meet Connor Sullivan, Wine & Beverage Director

Guiding Flagstaff House’s acclaimed beverage program is Connor Sullivan, whose unique background bridges science, history, and hospitality. With academic foundations in chemistry and biology, he brings a unique perspective to the art of wine and spirits, exploring how flavors and textures interact on a molecular level.

For the WSET Level 3 Certified Sommelier, pairing is both art and science. He describes the way flavor compounds overlap on the palate as “flavor matching,” and delights in unexpected harmonies, such as grapefruit with coffee. His curiosity fuels inspired combinations like Madeira with French onion soup or East India sherry with a pecan pie-inspired dessert on Flagstaff House’s summer 2025 menu.

Texture and terroir are equally central to the tasting experience. “Proteins on your tongue and in your saliva can attach differently to wine than to food, changing the way you experience flavor and mouthfeel. I think it’s fascinating to play around with that,” explained the Top 100 Diageo World Class Competitor. He often pairs shellfish with wines from limestone-rich soils such as Champagne or Chablis, where the fossilized shellfish embedded in the earth echo the flavors of the sea.

“I want people to remember their experience here 20 years from now,” said Sullivan, who is currently pursuing both the WSET Diploma and WSET Spirits Level 3 Certification. “Every night is a test. Whether it is replacing a napkin on a guest’s table, finding the perfect wine, or making a cocktail, I am always refining, always looking for ways to improve the guest experience.”

Renowned for its world-class wine program, Flagstaff House brings the same artistry and intention to its cocktail offerings. Each menu is thoughtfully composed to harmonize with the cuisine. Our talented bartending team excels at creating exceptional cocktails and refined zero-proof creations, ensuring every guest enjoys a drink tailored to their palate.

Crafted with seasonal ingredients sourced from around the globe and elevated by modern techniques such as reverse dry shakes, layering, and fat-washing, each cocktail is designed to be both memorable and unique. Creativity extends to curated mocktails, offering a sophisticated experience for guests who prefer to forgo spirits.

Connor Sullivan, a 2023 Patrón Perfectionist Finalist, is building upon Flagstaff House’s acclaimed cocktail program, seeking inventive ways to elevate the offerings. “We want each guest to enjoy something distinctive, something they will want to come back for again,” he shared.
